Jammy Dodger Cupcakes ✿

Hi , hope you’re all well, today I wanted to tell you about some absolutely delicious cupcakes I made! I saw this idea on Pinterest and I didn’t think for one minute they would turn out as good as they did! So without further a do my jammy dodger cupcakes ! 

Ingredients you will need : 

  • 150g of Unsalted butter 
  • 150g of caster sugar 
  • 175g of self raising flower 
  • 3 eggs 
  • 1 teaspoon of vanilla extract 
  • 12 mini jammy dodgers 
  • 4 teaspoons of strawberry jam 
  • Cream icing 

This recipe makes 12 cupcakes ! 

To begin with , put cake cases in a cupcake tray and preheat the oven to 180 degrees.

Then cream the butter and sugar together , until smooth and creamy – makes sure there’s no lumps to get a delicious airy cake! 

Add the eggs and vanilla and stir through the mixture with a spoon. 

Finally add the flour and stir together until all the flour is in the mixture and it’s completely combined.

Bake the cupcakes for 18-20 minutes , and make sure they look a lovely golden colour. 

Make sure you leave to cool! 

Once cooled you can ice the cupcakes – my favourite part ! I did a swirl on the top of the cake , as we want the icing quite simple.

Boil some water and add just a tiny bit to about 4 teaspoons of jam.Mix the jam and water together until the jam is runny enough  to pour gently over the icing.

And for the final touch add a mini jammy dodger ! And that’s it ! 

I love these cakes , and have gone onto make party ring versions as well ! So get creative and have sum fun – you might want to hide them  from your family though , becuase mine were gone in 10 seconds haha!

Easter treats ✿

Today I thought I would share with you a rather indulgent Easter treat , be warned this contains lots of chocolate ! I’m going to be showing you how to make a delicious Easter fridge cake ! 


First of all gather any food related Easter goodies. With this you can add as many chocolates or sweets as you like – go crazy! 

Next, in a pan , melt syrup ( 4 table spoons ) , margarine ( 4 ounces) and cocoa powder ( 4 tablespoons). Melt until it’s a smooth runny liquid – but make sure you don’t burn it ! 

Add a packet of digestive biscuits , I don’t have a measurement  for this I normally just add until the mixture is sticky and holds together well.

Then line a square tin with tinfoil and add your mixture .


Here comes the fun part , pat down the mixture and then push in mini eggs and sweeties and jelly beans and whatever you like really ! I added some jelly beans , some mini eggs and I also added some chopped up jelly rabbits ! I wanted to make this cake similar to the Cadbury marvellous creation , which I why I added some gelly sweeties.

Make sure you pat down on the mixture really hard, so it sticks together ,Then just leave in the fridge for an hour or so.

Once out of the fridge melt some chocolate (   do enough to cover the cake with a thick layer ). Then Decorate how you wish , add sprinkles and bunnies and whatever you like to make the perfect Easter cake!

Spring Cupcakes ✿

Hey guys , I’m excited today to show you some delicious Spring cupcakes myself and Siesta Bay Blog (go follow her blog !) made! These cupcakes were so yummy and looked perfect for the bright season! 


So first of all , we measured out all of the ingredients ( this is to make 12 cupcakes ) –

You will need:

4 Eggs 

225g caster sugar 

225g self-raising flour 

2tsp baking powder 

225g Baking spread / butter 

We just put all of the ingedients into the bowl – but we sieved the flower ! 

And whisk it up with an electric whisk till its light and creamy.

Pop in cupcakes cases and bake for 25 minutes with the oven at 18oc 

Once out and cooled it’s time for the best bit – icing !!

We choose a really bright yellow , because that screams Spring but you can choose whatever colour that tickles your fancy! 

Just use a big nozzle in a piping bag and pipe a swirl on top of the cupcake.

And if you want you can decorate it with fondant shapes , we chose flowers as they looked pretty cool!

Peanut Butter Cookies ✿

You may see the theme of peanut  butter treats , but peanut butter is my favourite! So I made these delicious cookies and I wanted to share them with you as they are so so yummy!

The recipe I use makes about 12-15 depending on how big cookies you want , but the ingredients you need are :

-130g of softened butter

-200g of soft light brown sugar 

– 1 egg

– a few drops of vanilla extract 

-200g of plain flour 

– half a teaspoon of baking powder 

– half a teaspoon of bicarbonate of soda 

– 300g of peanut butter 

As you can tell from the ingredients,these aren’t the healthiest cookies but they are a nice treat!

-First off preheat your oven to 170 degrees.

– Put the butter ( make sure it’s soft) into a bowl with the sugar and cream together u til soft and fluffy.

– Add the egg and vanilla and mix it well.

– Gently stir in the dry ingredients: flour , baking powder and bicarbonate of soda.

– Stir in the peanut butter ( I used crunchy peanut butter so it had a nice texture) and squidgy the dough into a ball.

– Lay some grease proof paper on a baking tray and using your hands makeu some balls and pop on. Mine weren’t spaced out further enough so they stuck together , so be careful!


– Put in the oven to bake for 12-15 minutes. When they come out of the oven , they will be very soft so leave to cool for a while – don’t be tempted to touch!

– Once nice and firm eat or store them and enjoy!

Peanut Butter & Chocolate Flapjacks

In today post I thought I would share a delicious recipe with you! These flapjacks taste amazing and are a perfect little treat!


So to begin with, on a low heat melt –

30g of butter

70g of peanut butter

25g of caster sugar

5 tablespoons of syrup

150g of dark chocolate

Once they’re all melted and it looks nice and smooth add 200g of oats and mix them together well!

Spoon into a paper lined tin and pop into a 180°c oven for 20 minutes!

Leave to cool for 10 minutes and enjoy! Xxx

Summer Meringue 

Hello everyone, today I have got for you a very delicious treat – a raspberry meringue!


-3 large eggs

– 125g of caster sugar

– 75g of icing sugar

– Some whippable cream


– some chocolate

– some little sweets like millions or jelly tots

– So to begin with just preheat your oven to 120°C , fan 100°C and gas 1/2.

– Get your eggs and seperate the whites from the yolk. Make sure none of the yolk gets in the white!

– Whisks your whites using an electric whisk to form stiff white peaks – make sure you don’t over whisk!

– Then slowly whisk in the caster sugar, about a quarter at a time until its smooth and glossy.

– Sieve in your icing sugar and gently fold with a metal spoon.

– Spoon the mixture onto a foil lined baking tray and cook for 2 hours.

– Once you’ve got your meringue out of the oven and its completely cool , whisk your cream until you can spoon it onto the meringue.

– Then melt some chocolate and drizzle all over the meringue – go completely crazy the more the better!

– Add some raspberries and sweeties and your done!

– Store this in the fridge and enjoy! xx

Summer Smoothie

This is probably my favourite smoothie, packed with fruit and very delicious !

I use :

– a handful of raspberries

– 4 strawberries

– a chunk of pineapple

– a few slices of peach

Fruit can be quite expensive, so when I have pineapple I freeze the left over bits to use for smoothies so not only do you not have to cut a new pineapple but you also save money and making your smoothie nice and cold! I use frozen berries and tinned peach. I use the juice from the peach as my liquid so my smoothie isn’t to thick. I put all my ingredients into a blender and whizz them up ! That’s your smoothie finished ! Pop into a nice glass, add a straw and enjoy !
