Hi , hope you’re all well, today I wanted to tell you about some absolutely delicious cupcakes I made! I saw this idea on Pinterest and I didn’t think for one minute they would turn out as good as they did! So without further a do my jammy dodger cupcakes !
Ingredients you will need :
- 150g of Unsalted butter
- 150g of caster sugar
- 175g of self raising flower
- 3 eggs
- 1 teaspoon of vanilla extract
- 12 mini jammy dodgers
- 4 teaspoons of strawberry jam
- Cream icing
This recipe makes 12 cupcakes !
To begin with , put cake cases in a cupcake tray and preheat the oven to 180 degrees.
Then cream the butter and sugar together , until smooth and creamy – makes sure there’s no lumps to get a delicious airy cake!
Add the eggs and vanilla and stir through the mixture with a spoon.
Finally add the flour and stir together until all the flour is in the mixture and it’s completely combined.
Bake the cupcakes for 18-20 minutes , and make sure they look a lovely golden colour.
Make sure you leave to cool!
Once cooled you can ice the cupcakes – my favourite part ! I did a swirl on the top of the cake , as we want the icing quite simple.
Boil some water and add just a tiny bit to about 4 teaspoons of jam.Mix the jam and water together until the jam is runny enough to pour gently over the icing.
And for the final touch add a mini jammy dodger ! And that’s it !
I love these cakes , and have gone onto make party ring versions as well ! So get creative and have sum fun – you might want to hide them from your family though , becuase mine were gone in 10 seconds haha!
